There is a problem with the font style some are italic and not very readable

The subtitlles have the same look as on the original disc. MakeMKV does only copy the disc content to mkv files.

And the subtitles on DVD and BD are transparent "pictures" that are overlaid on the video as needed. The entire look and placement of the subtitles are fixed by the DVD/BD author.

The only way around that is to find text-based subtitles and incorporating those in after the rip. There are many tools out there for that.

There are many sites that have text-based subtitles for movies and TV series, some of questionable legality, and some that are far superior to "official" translations, either in just their appearance or accuracy. Some of the official translations are really, really horrid.
