selecting audio/subtitle from command line

if I am using command line to extract a specific title from a DVD, is there a way to further refine it one only select specific audio/subtitle (based on language - I only want English)?

If I have to do another pass through the file using MKVToolNix that's okay, but if I can do it in a single step it would be cleaner...

If there is, it's not documented and I haven't stumbled across it. Audio, and especially subtitle tracks are so relatively small, I can't imagine it's worth the post processing time to remove them.

It's less about size, but more annoyance... I have some that I have passed to ffmpeg and end up with non-English audio! No big deal as I ran it through the GUI and got what I wanted but I was curious...
