Some of the drop downs are not available if you have not enabled "Expert mode" in Preferences->General.

Without seeing the log of the attempted rip, there is not much we can suggest.
Make sure you have debug logging turned on (link in my signature is a FAQ explaining how to turn it on), and copy/paste the expanded log into a reply here.

What type drive is this? Internal or external? The error sequence is similar to what is seen with power supply issues on external, USB-powered drives. If this is an "Extras" disk, it is quite possible that the 1 hour minimum you've put on titles is making it impossible for MakeMKV to find anything to rip. What happens if you shorten the minimum to, say, 120 seconds?

Without log information, it's rather hard to even guess. The FAQ in my signature tells you how to turn on debug logging (and other stuff, the important part right now is getting logging turned on).

Follow the instructions in the FAQ link in my signature to turn on debug logging, and try the rip again.

I can't say on the Funimation disks - I only have the older Bandai release on DVD, which was individual episode files. As I said, though, it's rare for Funimation to combine them. On the DVDs, were they combined as well, or individual episode files? I can understand not wanting to do the extra work,...
