I have installed a bluray drive into my server. Mapped network drive so its controllable/accessible from main computer.
However, I am unable to select this drive through 'Source' on makemkv ran from main computer. Only local drive is selectable.

Is this possible or do you have to launch makemkv from the computer that has the Blu-ray drive physically attached?

Rip movie with all subs checked.
Verify each subtitle track using VLC.
Open the mkv you've created in makemkv. Enable/disable/set default for the tracks available and re-rip.

Would a theoretical UHD makemkv rip be playable on a 1080p screen? I'f you're asking whether your 1080p TV will be able to read HEVC-encoded content from e.g. a USB drive plugged into one of the available ports, then the answer is most likely no (maybe very new TVs that have just been released, but...

Some drives have what is called "ripstop" limits in their firmware, that prevent them from ripping at faster than 2x speed. There are sites that offer replacement firmware to remove the limitation. I am not sure if Pioneer is one of the companies that includes this "feature". I ...

The file created by makemkv will be 100% lossless. I have no experience of dvdfab so can't comment on that.

There is now way around it. Rip once with all subs, identify correct stream (tricky and time-consuming if you don't know at what point the forced subs are meant to appear), then rip again removing any unwanted subs whilst applying the correct flag to the forced sub stream.
