I'd suggest emailing the support email address so Mike can take a look at this and/or tell you what info he needs to properly investigate it. Did you put in the beta key? Mike said in another post that 1.7.0 should still work for the time being with the current key. If not then send him a message because he's aware of the problem but thought there was a workaround. It worked okay for me a couple of weeks ago when I needed to rip some more...

DVDPatcher can be used to write the correct aspect ratio into the mpeg stream, so when MakeMKV processes it you'll end up with the correct aspect ratio in your MKV file. Often you'll have to do this anyway when there are multiple versions of subs in each language and you can't distinguish them before ripping, so it's worth knowing how to do it.
But, yes, if you just want English to be ripped then simply deselect the other tracks in MakeMKV.

mkvmerge, which is part of MKVtoolnix is the easiest way.
Load in the MKV file, uncheck the streams you don't want and then hit remux.

In the meantime just use eac3to to extract the LPCM track as FLAC and then re-mux it in place of the LPCM track in mkvmerge. You'll have the LCPM track compressed losslessly (i.e. no loss of fidelity whatsoever) and a space-saving to boot.
