Use "MKVToolNIX GUI", open the mkv file, go in the right windows to "Video properties" and set the aspect ratio to 16:9 and remuxx the file. This should fix it.

Did you tried "Open DVD files manually" ? If the missing title is in one VTS VOB set, you can open the first VOB file of set VTS set in "MKVToolNIX GUI" and append the others (if any) VOB files to the first one (append !!, not open !! -> use right click on the first VOB in MKVToo...

There is no "more specific" tutorial available as the link to the makemkv provided help.

If you need specific help, please provide more infos and maybe someone can give you some help. Best is to open the DVD in manual mode, provide a screen shot and what you want to kow.

Goto to the "settings -> Advanced" tab and add "-sel:all,+sel:(spa|eng)". The first "-" deselects anything and the "+" selects what you want.
