I do regularly see crashes on macOS like you describe, which happens when MakeMKV can't read the disc properly, so you are not alone. Maybe I should start getting my USB stick out of my arse, and start sending in logs..

Try cleaning the discs with a bit of soap. Fixes these kind of errors for me in 50% of the time.

Are you following Plexs file and folder naming guidelines for adding media to the server? Because this should be a non-issue.
I use MakeMKV and MKVTool*nix extensively, and have never encountered this issue.

I only rip english and my native language tracks/subtitles (Unless of course, some other language is the only audio track), to save space. I always run them through Handbrake to compress the video track, because honestly, I can't tell the difference visually, and I prefer M4V containers over MKV for...

Apple has never supported MKV's ever, so they can't remove what they don't support. You might be mixing it up with macOS 10.15 likely only supporting 64 bit software, and the fact that MakeMKV needs 64 support in order to run? And even in that respect, there's no problem, since MakeMKV already is 64...

I'm using linux and the log shows it finds java but it never identifies the correct play list even though others with the same disk have posted on this forum that it works for them (I think they used windows). Is it expected that Mike wants compressed files that are 10+ GB? I have a backup where there's, among others, a folder full of .bin files, taking up ~15GB.

For what it is worth, MakeMKV started using JRE for my discs, without any changes from my side AFAIK. At least, the last 2 discs has actively written it was using it, and it even informed which was the main feature for the one I am currently ripping. Surprise, surprise.

Another vote for AllanStyle-SUBSILVER being the standard. The current Gren-Style is absolutely hideous, but worst of all, it really is bad at conveying information.
