You can convert DVD to .m4p or .mp4 and not in .mkv files?

That requires a program to do transcoding. I use handbrake (see handbrake.fr), but that isn't the only tool out there.
Rip with MakeMKV, and you have lots of options for post-processing to your final needs.

Yeah, which is probably why it's called Make
MKV.
