Blu-Ray Menus

hello all-
i have copied a few blu-ray discs using the largest file method but i was wondering if there was a way i could get the Menu as well when copying for PLEX? the reason for this is I would like to be able to chooses which Audio track to use. sometimes i watch on a desktop or a laptop and i need the 2 channel track. other times i watch on my main 100" TV with a Levinson 502 Media Console and Dynaudio Evidence Masters. can someone explain if this is possible and if so how? also, can i UNcheck all the foreign language and subtitle tracks with no issues? please inform. thanks in advance....
