OK, So how do i Make a MKV file rather than an AVCHD Content package?

for context, ripping a Blu-Ray, Whatever I do I seem to end up with a package called BDMV of type AVCHD Content.

there seems to be very little user interface to allow me to suggest that it does anything else.

Beyond a choice of the output location, I can find nowhere to specify output file name or type.

And since the product is called MakeMKV I'm sort of naively assuming that it's supposed to be able to do that?

You are probably missing the big "OPEN" button that has the icon of the Bluray disk on it, and using the "BACKUP" button. Click on the disk after it stops spinning, and MakeMKV will read the disk structure and allow you to select which titles (and tracks within each title) you want to turn into MKV files.

Eons ago (in computer time), that button actually LOOKED like a button, but I think Mike liked the "flat" look, and so now the button isn't so obvious. For DVDs, there is no backup option, so that button doesn't appear.
