True hardcoded for foreign subs without selecting pgs

How do I get True hardcoded for foreign subs, so default when i just play the movie through "plex" without selecting subtitles its hard coded into the screen for like example FURY 2014 german speaking scenes. How? I have this.

"True" hardcoded subs are encoded into the video stream and since MakeMKV does not touch the video, it is not possible. I don't own the Fury Bluray but if the subs are flagged as forced on the disc, MakeMKV will create an extra track with only these items which can be set to forced in the mkv. If it does not, which most likely is the case, there should be a separate track on the disc that contains only the German items and you would need to rip and flag it as forced/default.
It's still possible Plex and other playback software ignores these flags during playback. Hardcoding the subs can be done with Handbrake or similar tools but it will take time, degrade video quality slightly and most likely won't be worth the effort.
