When Marnie Was There (Blu-Ray) Audio issue.

I want to rip this movie so I can watch it via Plex, but out of the 2 options I'm given in MakeMKV (both 21.4 GB), there's one that is English+French, and one that is Japanese+French, but not one that is English+Japanese, which is what I want. Well, to be clear, there is one, but it starts in the middle of the movie, so it's useless. What do I do?

That's not MakeMKV's fault, it's the way the disk is authored. The two play lists only have the audio tracks you're seeing.

In way to have it the way you (and I) want it, is to rip both play lists, and use mkvmerge to join them, selecting the tracks you want from each.

I did not hang on to the mkvmerge command line to do that; Sorry.

I know it's not MakeMKV's fault. I think I'll just have to settle for what is offered. Thanks.
