You removed the information about what drive you are using, but the errors you are getting are consistent with a USB-powered drive that is not getting enough power to run at the speeds MakeMKV can read. It shuts down, giving a read error, followed by device not available errors as it resets.
Make sure the drive has full power available. Plug it in to ports ON the computer, not on a hub, unless the hub has its own power supply. If the drive came with a "2 head cable", make sure both are plugged in to ports with full power available.

I'll get exactly the same mistakes out again. No matter if I do it over Thunderbolt 3 or Usb 3.0 it comes out the same. What's funny yesterday about it had everything works well. Now it's not ok anymore. I've tried several blurays but the same thing happened.
